Good afternoon and happy Thursday pals! Hope you've been doing grand like the canyon!! I know, I know... it's been a hot minute but I'm back here again to not only share my awesome experience attending my first exclusive foodie event but most importantly, to talk food, of course—specifically Lolita's breakfast menu :-)
During my freshman year of college at the Academy, I remember requesting to go to Lolita's Taco Shop as soon as my homies picked me up from the airport after being deprived of authentic Mexican food for a solid 5 months in the Eastcoast--it was complete torture! My usual go-to since I was in high school would be their "2-in-1" burrito and/or the classic carne asada fries with a ton of their bomb salsa verde and a handful of fresh lime wedges. They never disappoint! I mean, you really can't go wrong with a place that is dedicated to serving up authentic Mexican food made fresh daily from scratch.
But I'll be frank, I never tried nor knew breakfast options even existed at Lolita's Taco Shop until I was invited via Instagram (which by the way, y'all don't know how beyond stoked I was when I saw their official account sliding in my DMs! Best DM I've received ever, hands down).
I feel like I have some explaining to do for the unannounced hiatus... ! My apologies if you are an avid reader of Kristine's Kreation's. I have no valid excuse as to why but I do plan on getting back into the blogging groove and adding a couple of changes to keep things zesty like this particular post! One of my absolute favorite things to watch on YouTube besides "what I eat in a days" are monthly favorites videos from my favorite YouTubers like Megan Batoon (my idol!!!) and Whitney Simmons (the goddess of fitness!!). It's simply a video of them discussing their opinion on products they've fallen in love with during the month. Sounds kinda lame upfront as I type this up but I pinky promise they're pretty spiffy!
Anywhosies, some of the things I have been brainstorming about on implementing on the blog are the following:
So there's just a gist of what's been going through my noggin during the month of October. I am gearing toward creating things that have will hopefully serve a purpose in someone's life whether it is to inspire, to educate, to inform, and/or to entertain. I want to be able to make a difference in someone's life through what I put out on the Internet and it could be as little as, "I went to this restaurant because of you and it was awesome sauce!!" Well actually, that's not even a little thing because I absolutely LOVE it when people tell me that they used @meow_eats to help dictate what they at that day. It's so neat!! :")
I digress - as per usual *shrugging girl emoji with purple shirt* With all these I want to tackle as we end the year, I feel as though I want to do so much but there's so little time in the day when I have to deal with the day-to-day tasks (school, work, work, work, social lyfe, @meow_eats, Bob, keeping the apartment spic and span, and most importantly, my overall well-being***). I go to sleep every night excited and beyond grateful for the new day to arrive because I am able to invest time in these things despite how hectic my schedule can get.
I'll gush more about this later for sure!! Thank you so much if you're reading this now. I truly appreciate each and every one of you guys. Y'all inspire me more than you ever know to dive into the unknown at any given opportunity. You don't know how thrilled I am to take you along to this beautiful journey :-) I love you to bits and pieces and hope you're living to your full potential because you have so much to give to this world, too!!

OH MY LANTA. Ok so your girl is still making baby steps toward veganism and this... this right here is my--I was just about to quote a $oulja Boy song, please disregard hahaha--this is a total game changer in the cream cheese world! I would eat this instead of regular plain Philly cream cheese. Yup, I said it. I drove all the way to Whole Food's in Hillcrest (about 20 minutes away from) just for this when I first tried it!! Then recently discovered a week later that the Sprouts' in Eastlake carries it. YAY!!!
This book makes me feel like a BADASS. That's as simple as it gets!! I'm a huge sucker for self-improvement books and this one here ranks in my top 5, no doubt. Spiderwebs. (+5 if you get me) Anywhosies, I find myself looking back into this book and reading specific excerpts just to remind myself how much of a badass I truly am. GET THIS BOOK!!
This vegan ice cream is absolutely divine!! I mean let's be real, you can't go wrong with the combination peanut butter and Oreo cookies. There's really no room for error at all whatsoever. Just trust me on this, ok??
I drank London fogs all throughout summer but with almond milk! Changed it up in October by ordering one with soymilk and not sure if I'm going back anytime soon!! Teehee.
Special shout out to Lei Lei--and/or Tori or Storm??! I just remember Leia telling me about this nail polish because of Tori and/or Storm bought it at Target. $18 upfront but I know I'll be saving money in the long run by painting my nails on my own rather than hitting up Yumi's Nails on Broadway every month for $50 a pop (pedi and mani, plus tip). The package advertises up to "14 days of stylish wear" but I've been rocking this pretty polish for a solid 3+ weeks now! Muy bueno :-)
$4.99 for Spotify and Hulu for college students??! Praise the Lord! I was more so a Netflix fan (or more so a leech thanks to Alicia jajaja) but Hulu is the MVP for having some of my Food Network favorites like Good Eats, Chopped, Triple D!!!, and Cutthroat Kitchen as well as Ricky & Morty!

'Tis the season for everything pumpkin!! Previously before this gorgeous French toast bake, I had made a pumpkin maple granola--another incredible recipe from Minimalist Baker, by the way. The recipe called for only 1/4 cup of pumpkin puree so I had an open can of pumpkin just chillin' on my counter. It wasn't until 11:03 PM last night that I decided to prep this beautiful creation :-)
Good evening, good morning, or good afternoon wherever you may be pals! I'm typing this blog up at 2:38 AM because I had originally planned to take a quick little catnap at 6:00 PM right after cross country practice but end up waking up 3 hours later... I ended up sleeping basically so now I'm suffering the consequences! It's actually not too shabby really because 1. I finished watching CT Fletcher's documentary on Netflix which was super motivating by the way! I would highly recommend watching it most especially if you're finding yourself in a slump and/or trying to get back into the gym. I literally fell in love with the guy by the end of the film! 2. I figured since I'm up I pour my energy into my blog for kicks and gigs :-)

Well I'm going to anyway because I've spent all of my Sunday so far in solitude--which is ideal for the introvert in me, of course! I just have this overwhelming urge to spill the beans to anyone about Blissful Supper's first pop up dinner! Now you might be wondering, "What in the world is Kristine talking about now??" Or you might not be. Who knows! I'll try my best to explain anyway if you care to listen--or I guess read in this case :-)
Lila (@lilanattalie) and Alexa (@alexafuelednaturally) are the two brilliant masterminds behind Blissful Supper. They held their first pop-up dinner last night which consisted of a 5 course plant based vegan meal curated from local San Diego produce. What I thought was absolutely adorable was their main purpose behind as to why they wanted to host this--they simply wanted to bring their vision to life through food and through the food, they had hopes of connecting the San Diego community and that they did with flying colors.
I am so grateful to be apart of their first pop-up dinner and glad I dragged Leia (@marleiaa) along as my date :-) We met some phenomenal people such as Halina of Lina Flows (@linaflows) and Kaylie of Purely Kaylie (@purelykaylie) on Instagram--be sure to check out their gorgeous accounts!
For these incredible ladies to plan, envision, create, and essentially execute this dinner with flying colors with just a month prior to planning was so awesome to me. I would most definitely be interested in attending their second pop-up dinner as soon as they announce it!

Anywhosies, this morning I decided to blog about the delectable elotes I made earlier this week for kicks and giggles really. The apartment complex we live at has these communal grills near the pool area and I've been dying to try them out! So what better way to test out my grilling skills for the first time ever actually with these super tasty yet super simple elotes!! I'm so excited for you guys and truly hope you take the time to incorporate these into your next meal very, very soon :-))
Correct me if I'm wrong but I feel like most people don't usually look forward Sundays since Monday is the day after. I know I personally despised Sundays as a midshipman because it was the end of the weekend and we had to return to Bancroft Hall in time for end of liberty (EOL) formation every single Sunday at 1800. Thee worst.
Ok I'm just exaggerating, it wasn't thee worst. Things could always be worse. Reflecting back on my days as a midshipman, I realized just how bitter and ungrateful I was! Rather than mulling over about what I could have done better or what I should have done as a middy, I figure I cherish every single day from this point forward. Despite everything that boiled down last year during my separation, I am truly forever thankful for the unique opportunity and experience. I honestly feel like I could write for hours about the lessons I've learned and apply to my life today but I'll just keep them short and simple for you in hopes that you can learn something valuable, too.
Essentially what I was trying to get at is that I actually forward to Sundays now because I can blog! I know it's only been a couple weeks now but I'm thoroughly enthralled during the whole process of a new post and I hope you guys are as well when you read these :-) But please forgive me, I know you guys came here for fries so fries is what I shall speak of thee. (Is that even proper? Welp)

I whipped up a batch of these beautiful protein pancakes Friday morning before Amber left for a week of training. Despite the fact that we barely see each other anyway throughout the week because of our busy schedules, I still miss her so! The apartment can get eerily quiet since we're in a gated community but thankfully I have either my music blaring or a podcast to fill the blank noise.
This recipes requires a pressure cooker!!* The instructions for this recipe will be modified for an Instant Pot, the brand I own.
:"") *wipes tears away* This was the first successful recipe I made in my Instant Pot!! I stress the successful part because figuring out how to use this contraption was quite the mystery when I first unboxed it. You know when you're super stoked about getting something brand new but don't wanna bother reading the instructions on how exactly to use it?? That's the rookie mistake I made when I got this wonderful appliance. I couldn't contain my excitement!
Anywhosies, chicken. Chile. Verde. Tacos. Chicken chile verde tacos. (I was going to say "Say that 5 times fast" but it's actually pretty simple) These are absolutely incredible! The punch of flavor from the chile verde itself is surreal--I couldn't believe my tastebuds that I had created such a flavorful dish in such a short amount of time. This Instant Pot is beyond magical and I seriously can't wait to discover new recipes to share with you all--and with my stomach most importantly :-) I'll get to the recipe already!
