I whipped up a batch of these beautiful protein pancakes Friday morning before Amber left for a week of training. Despite the fact that we barely see each other anyway throughout the week because of our busy schedules, I still miss her so! The apartment can get eerily quiet since we're in a gated community but thankfully I have either my music blaring or a podcast to fill the blank noise.
But more about the pancakes!! These pancakes are packed with about 21 grams of protein and a lil' extra since I slathered almond butter on mine (highly recommended!). I would also recommend getting creative with the toppings to not only add some fun toppings but a pop of color. I absolutely love taking the time to make my food look pretty even if I am going to destroy my work in a matter of minutes right after taking pictures for my blog/Instagram :-)
Also similar to the protein packed waffles I posted awhile back, I used the Kodiak Cakes' flapjack and waffle mix again from Costco! (NTS: Bring waffle iron from home to apartment)
Directions from the box -
Blend or whisk ingredients together. Cook pancakes on a preheated, lightly oiled pan on medium. Add about 1/4 of the mixture for each pancake--do not overcrowd the pan! The pancakes should be ready to flip after bubbles stop forming and the bottom side is golden brown. Cook opposite side until golden brown.
Top with your favorite toppings such as fruit, Greek yogurt, cinnamon, maple syrup, granola, nut butters, ... the list goes on but that's all I can list from the top of my head :-) Enjoy folks!
